偶然問起老公最愛吃的甜點為何,結果他的回答,竟然也是布丁!

所以,那一夜,我們在家做布丁…
首先是煮焦糖醬 (二人份)
材料:白糖60公克,水50公克
糖和水一起放入鍋中,用中大火煮,不要攪拌,當水被蒸發到所剩不多時,透明的糖漿就會慢慢變黃。一看到糖變黃 (如下圖的泛黃感),就要馬上關火,將糖移開火爐。不然,糖漿馬上會轉為咖啡色。到那時,就成了苦糖。

趁焦糖漿還熱著的時候,將它倒入耐烤的模形中。注意:焦糖漿一涼,馬上就會變硬很難處理。

因為蛋汁遇熱會成為蛋花,所以千萬不要將蛋打入熱牛奶中。
如果你希望布丁餡有一些甜味,可以將一半的牛奶先加熱後,加入適量的糖,再加入另一半的牛奶,最後再將蛋汁加入牛奶中。
布丁餡備妥了。

接著將布丁餡倒入裝有焦糖漿的模型中。
